How much you win depends on which odds you get. If you bet $10 and the odds are 1/5, you could win 10 * (1/5)= 2. So, in that example your stake would be 10, to win is 2 and if you bet on the right team you would get 10+2 = 12 as a total return.
"in play" means that you are betting on a match that has already started and is shown on a tv channel somewhere.
